Quick Chicken and Veg Sauté

Need a quick dinner, or healthy meal prep lunches for the week? Look no further! This quick sauté takes about 30 minutes and packs a punch of flavor! It’s also bright and feels healthy too!
Ingredients:
2 skinless boneless chicken breasts
One half red onion
1 large zucchini
1 large tomato
1 clove garlic
1 T smoked sweet paprika
1 t cumin
1 t ground coriander
2 T Olive oil
1 cup farro
Cook farro to package direction. While that’s cooking, you can make the rest! Cube chicken and season with all spices and S&P. Brown meat in olive oil. Add tomato to release its juices. Then add the rest of veggies and S&P to taste. Cook it down until the flavors marry together and serve over the farro. If it ends up being a little dry you can always add a little water to loosen it up. You can also use whatever veg you have on hand. I had these and I like them for their juiciness!
